Beverage applications

Introduction

Beverages are all industrialized products, intended for human ingestion, in a liquid state, without medicinal or therapeutic purposes; it must contain, necessarily, a natural  raw material, plant or animal, responsible for its organoleptic characteristic.

There are large types of beverage groups, obtained by mixing, fermentation and distillation, allowing them to be divided into five large groups, such as: 

  • Natural Drinks (water, milk and fruit juice) 
  • Infusions (teas and coffee) 
  • Food drinks (have high nutritional value) 
  • Refreshing Drinks (cocktails, juices, soda syrups…) 
  • Alcoholic beverages (fermented, distilled and syrupy – wines, brandy and liqueurs). 

The most important purpose of drink is to quench thirst, however, in addition to being a basic human need, drinks are part of the culture of society. Drinks are elaborated  and produced since the dawn of humanity by different peoples. Several nations preserve  their roots and transmit their customs through their drinks. The consumption of drinks  around the world depending on their local traditions has different meanings, rituals and  times when consuming. 

The beverage industry is flexible and is always looking for novelties, especially with the use of regional raw materials. In the North region of Brazil, in addition to the  famous Amazonian cuisine, rich for its diversity and flavors, there is also a diversity of  drinks typical of the region such as jambú cachaça, produced from the jambú leaf, which  has a numbing effect on the tongue. Another regional production is açaí cachaça, using  in its composition açaí, a world-renowned fruit applied in countless recipes. Açaí  produces wines and refreshments from the grains harvested from the palm tree known as  açaizeiro.

Many of the regional drinks are originally indigenous, some have been resignified, but have not lost their originality. They are used in indigenous rituals or produced to  consume in moments of leisure, and carry an ancestral weight, as this knowledge in  handling herbs and roots was passed on by the ancients. For many indigenous groups,  drinks are used for the construction of the collectivity and manifestation of the  constitutive activities of the social group, expressing particular sensations and values.

Beverages in general become popular when they meet a specific need or align with some historical trend. Beverage formulations are increasingly elaborate, seeking not  only the sensory aspect, but also the union of factors that provide a nutritional and even  functional addition to the products.

Unconventional food plants (PANCs) cover thousands of species of rustic and native plants of wild nature, rich in nutrients, being a good alternative to improve the  nutritional quality of the population, as they present nutrients such as vitamins,  antioxidants, phenolic compounds, carotenoids, considerable amounts of minerals such  as potassium, magnesium, manganese, vitamin C and provitamin A, lipids, proteins and  fiber in high amounts.

Due to these attributes, these species are promising in the area of food technology, for the formulation of new products, mainly in the beverage production chain. Some of  its applications in this axis are: flavored water, teas, dairy drinks, syrups, soft drinks,  juices, vitamins, alcoholic beverages, kombucha, among others. With this in mind, a  catalog of applications in beverages was created with all the PANCs produced (açaí,  chicória, jambú, oro-pro-nóbis, taioba, vinagreira and cariru) currently produced by the  Horta da Terra.

Juice

Product: Detox juice with cariru

You know that feeling of feeling heavy and bloated after eating a lot and poorly?  

For these cases, nothing better than a detox juice, that is, a juice prepared with special  ingredients that help detoxify the body! We will present several suggestions of cariru  detox juices, suitable for purifying the body, check out the preparation below and try it!

Ingredients: 

  • 3 g of cariru; 
  • 1 cucumber unit; 
  • 1 unit of green apple; 
  • 1 unit of lemon; 
  • 300 ml of water (1¼ cups). 

Preparation: 

Peel, remove the seeds from the cucumber and cut into large pieces. Do the same with the apple. Put all the ingredients in the blender, along with the glass of water and the  lemon juice. Beat for about 2 minutes, until you get a homogeneous mixture. Enjoy your food!

Product: Functional cariru juice with orange

Perfect duo to keep immunity high, and can be served from breakfast to dinner. 

Ingredients: 

  • 3 g of cariru; 
  • 1 and ½ cups of whole orange juice 
  • 1 tablespoon of honey; 
  • 200 ml of water. 

Preparation: 

Just mix all the ingredients in a blender and serve cold. Double dose contribution to immunity!

Product: Functional cariru juice with beetroot

Cariru juice with beetroot is a very nutritious detox option, as well as helping to strengthen the immune system and muscles. 

Ingredients: 

  • 3 g cariru; 
  • 2 units of beetroot; 
  • 500 ml of water. 

Preparation: 

No blender, blend everything. If desired, you can season with salt or pepper to taste or even mint. Serve with ice and enjoy to intensify your muscles too! 

Product: Functional cariru juice with cabbage

Detox drink for the body. How about making the cariru juice even greener? Bet on the use of cabbage to intensify the beneficial potential of the drink. She is a good  option for those who want a very refreshing juice to help relieve body swelling and fluid  retention.

Ingredients: 

  • 3 g of cariru; 
  • 2 cabbage leaves; 
  • 1 slice of ginger; 
  • Juice of 1 lemon; 
  • 200 ml of water. 

Preparation: 

Beat the cariru with 2 cabbage leaves together with 1 slice of ginger, lemon juice and water. It’s a delight! If you want to improve the recipe even more, the tip is to prepare  the juice with 1 small apple and 1 teaspoon of flaxseed. Just beat, pass the drink through  the sieve and the juice is ready!

Product: Functional pineapple juice, with cariru and cucumber

Color, flavor and aroma. It only takes five minutes to prepare this delicious and fresh drink. 

Ingredients: 

  • 40 g of pineapple; 
  • 5 g of cariru; 
  • 60 g of cucumber (optional); 
  • 1,5 g of ginger root (optional); 
  • 2 mint leaves; 
  • 30 g of apple; 
  • 1 L of fresh water. 

Preparation: 

Cut the pineapple, cucumber and ginger into small pieces and add to the cariru. Add two to three fresh mint leaves and the sliced apple. Add fresh water and blend in a blender. Serve immediately. Optional: you can add 1 orange and 1 kiwi to make your  juice more refreshing and healthy.

Product: Chicória juice

Chicória is a low-calorie food – a half-cup serving of the vegetable has only eight calories. With this, we can understand that preparing a sugar-free chicória juice can help  with weight loss. A cup with approximately 30 g of chicória contains doses of calcium,  potassium, magnesium, phosphorus, zinc, vitamin B9 (folic acid/folate), vitamin A,  vitamin C and vitamin K. 

Ingredients: 

  • 3 g of chicoria; 
  • 200 ml of water.

Preparation: 

Add the chicória and water to the blender. Beat well for approximately 2 minutes, until obtaining a homogeneous liquid. Serve immediately. 

Product: Chicória juice with mint and lemon

Developed from functional foods, which produce metabolic and physiological effects beneficial to health, the famous detox juices are known to act as antioxidants in  the body, fighting premature aging and providing the body with various substances rich  in fiber, vitamins and minerals. chicória juice has numerous benefits for the body and  mind, without a doubt it eliminates fat from the body and also offers rapid weight loss. 

Ingredients: 

  • 1 lemon; 
  • 3 g chicória; 
  • 1 mint leaf; 
  • 200 ml of water (or coconut water). 

Preparation: 

Blend the chicória and mint with the water in a blender. Squeeze the lemon and beat for another three minutes. Serve immediately. Optional: Add 1 orange. 

Product: Chicória juice with flaxseed

This chicória juice recipe with flaxseed is a great source of nutrients and vitamins, helping to strengthen the immune system. It is also a source of fiber, important for proper  intestinal functioning, in addition to favoring weight loss, as it increases the feeling of  satiety. 

Ingredients: 

  • 3 g of chicória; 
  • 1 cup (tea) of chopped peeled pineapple;
  • 5 cups (tea) of water;
  • 4 tablespoons of sugar;
  • 1 tablespoon of ground flaxseed.

Preparation:

Blend the chopped pineapple with the peel, chicória and sugar with water for approximately 2 minutes. Strain and mix in the crushed flaxseed. Serve well chilled.

Product: Ora-pro-nóbis juice

Do you know ora-pro-nóbis? Its leaves are rich in nutrients such as fiber, vitamins A, B and C, calcium, iron and phosphorus. A plant widely used by vegetarians and vegans  for its high protein content, it also serves various medicinal purposes. The ora-pro-nóbis juice is natural, easy, healthy, fast and very practical to drink during the day, the taste is  amazing, in addition to helping to restore the body. 

Ingredients: 

  • 3 g of ora-pro-nóbis; 
  • Juice of 1 lemon (or 1/2); 
  • Juice of 1 orange; 
  • 250 ml of ice water. 

Preparation: 

Put the ora-pro-nóbis inside a blender and add the lemon juice, the peeled orange, seeded and cut into 4 parts. If you prefer less sour, add just half of the lemon juice. Add  the water and beat for approximately 2 minutes. Preparation: 5 minutes Yield: 1 serving.  Approximately 15 Kcal per single serving. 

Possible Combinations: 

  • Base + 1 thick slice of pineapple; 
  • Base + 50 g of pumpkin; 
  • Base + 1 orange; 
  • Base + 8 mint leaves; 
  • Base + 1/2 kale leaf + 1 teaspoon of ginger and powder or 1 piece of raw ginger; 
  • Base + 1/2 base with lemon + 1 teaspoon of turmeric + drops of propolis; 
  • Base + 4 apples + 1 spoon of ginger. 

Product: Green tangerine juice with taioba and cucumber

You will fall in love with this recipe, those who found the ingredients strange, I ask you to try to abstract the composition and experiment. No taste overlaps and the result  is a tasty, naturally sweetened and very refreshing juice. I bet you will love it! 

Ingredients: 

  • 2 tangerines; 
  • ½ cucumber; 
  • 10 g of taioba; 
  • Honey (optional). 

Preparation: 

Make a juice with the tangerines. Transfer the juice to a blender or mixer cup, add the washed and chopped cucumber, and the taioba. Whisk until everything is  homogenized. Taste and, if necessary, add honey to taste. Strain and serve immediately, with or without ice. Tangerine juice can be substituted for orange juice. Yield:  Approximately 1 cup of 250 ml.

Smoothie

Product: Açaí smoothie

Let’s start the day with energy? Prepare this delicious, antioxidant-rich energy smoothie  with many other health benefits! 

Ingredients: 

  • 3 g of freeze-dried açaí; 
  • 1 and 1/2 cups of guarana syrup coffee (can substitute for 2 tablespoons of sugar or sweetener); 
  • 2 tablespoons of powdered milk (or 200 ml of almond milk); 
  • 1 small banana, chopped; 
  • 3 spoons of granola; 
  • 200 ml of ice water. 

Preparation: 

Combine all ingredients in a blender and blend well for 2 minutes. Pour into glasses and serve. Ready in 5 min. Yield of 2 servings.

Product: Avocado smoothie with cariru

The vitamin with the cariru blend together with the avocado blend would be a powerful source of functional vitamin for the body. Cariru has anti-inflammatory and  antibacterial properties, as well as being a calcium-rich PANC, which strengthens bones  and teeth. 

Ingredients: 

  • 300 g of avocado; 
  • One tablespoon (10 g) of cariru; 
  • 3 tablespoons (10 g) of powdered milk; 
  • 2 tablespoons (10 g) of sugar; 
  • 200 ml of water. 

Preparation: 

Mix all the ingredients and place in the blender, hit for 5 minutes or until everything is homogeneous and uniform. Serve at room temperature or add ice.

Product: ora-pro-nóbis vitamin

The ora-pro-nóbis is an extremely rich plant in nutrients, so it is considered an excellent plant to supply nutritional deficiencies. This vitamin is really tasty, children  drink it without complaining. It is a great option for those who are looking for a healthier  diet.

Ingredients: 

  • 1 large slice of pineapple; 
  • 1 small banana; 
  • Juice of one lemon; 
  • 250 ml of coconut water; 
  • 5 g of ora-pro-nóbis; 
  • Ice to taste. 

Preparation

In the blender cup, add the ora-pro-nóbis, the chopped pineapple, the chopped banana, the lemon juice and the coconut water. Beat well until obtaining a homogeneous  mixture. Then add ice to taste and hit some more. Now just put the juice in the glasses  and taste. Preparation time: 10 minutes

Tea

Product: Caruru tea

The taste and appearance are similar to spinach. Cariru tea is believed to improve memory and concentration, as well as aid digestion as it is rich in fiber.

Ingredients: 

  • 10 g of cariru; 
  • 1 L of water. 

Preparation: 

First, put 1 liter of water and add 20 g of cariru. Bring the mixture to a boil. Let the mixture boil. Once boiling, time 10 minutes. Turn off the heat and let it simmer for a  few more minutes. Then sweeten it however you like. The recommended dose is one cup  twice a day. Enjoy.

Product: Jambú tea

The plant has medicinal properties that help relieve some pain, due to its analgesic effect. In addition, jambú tea has a diuretic, laxative, antiviral, aphrodisiac and much more. 

Ingredients: 

  • 6 g of jambú; 
  • 500 ml of water. 

Preparation: 

To make the tea, we recommend putting 10 g of jambú in 500 ml of boiling water, let it rest for 10 minutes, strain and drink up to 3 times a day. 

Product: Vinagreira tea

Vinagreira tea has a delicious and refreshing sourness, in addition to being super functional, presenting anthocyanins and tannins, and being very rich in flavonoids.  Another benefit of tea is the diuretic and digestive properties that vinagreira provides. 

Ingredients: 

  • 1 L of water; 
  • 10 g of vinagreira.

Preparation: 

Add the herb to the boiling water, turn off the heat, cover the container and let it rest for 10 minutes and then strain. Avoid reheating so as not to diminish the effects of  the plant. If you prefer, sweeten with honey or sugar.

Product: Jamaica water

It is a drink from the Caribbean and Central America. It is a tea made with the flowers of  the vinagreira plant. The drink is quite refreshing when served chilled and relaxing when  served hot, but is usually served chilled. 

Ingredients: 

  • 1/2 cup freeze-dried powdered vinagreira; 
  • Water (8 cups); 
  • Sugar (approx. 1/2 cup, or to taste); 
  • Optional: rum, ginger, finely sliced lime for garnish. 

Preparation: 

Bring 4 cups of water to a boil. Add 1/2 cup vinagreira and 1/2 cup sugar. If adding ginger, add it to the mix at this stage, to taste. Let the mixture boil for approximately 2  minutes, stirring occasionally. Cover and let steep for approximately 10 minutes. Strain  this infusion into a separate container. Add the remaining 4 cups of ice water and mix  well. If adding rum, mix it at this step. To serve immediately, pour over ice. If not, let it  cool in the fridge until it’s time to serve 

Kombucha

Product: 100% natural Acai Kombucha

The açaí flavored Kombucha is a new trend produced from the 100% natural lyophilized powder of the fruit. Known as an ancient Chinese drink, Kombucha is  handcrafted and has conquered the public not only for its flavor, but for its various health  benefits. All drinks are probiotic, made from tea, sugar and a live culture of yeast and  bacteria known as SCOBY (Symbiotic Colony of Bacteria and Yeast).

Ingredients: 

  • 300 ml of prepared Kombucha; 
  • 10 g of açaí. 

Preparation: 

In a glass pot add the prepared Kombucha and 10 g of açaí. Stir well and close the container for fermentation to take place. Wait 24 hours and serve normally.

Product: Vinagreira Kombucha

Have you ever heard of kombucha? It is a probiotic drink that can be prepared by fermenting tea using a kambucha scoby (a gelatinous disk made from colonies of bacteria  and yeast). The result is a carbonated, sweet, low-carb beverage rich in probiotics,  vitamins and essential amino acids. By adding the vinagreira to the kombucha we get a  drink rich in antioxidants and very tasty! 

Ingredients: 

  • 10 g of vinagreira; 
  • 1 L of water; 
  • 70 g of sugar; 
  • 100 ml of Kombucha. 

Preparation: 

First, prepare an infusion with 10 g of vinagreira soaked in 1 liter of water for 20 minutes, with subsequent addition of 70 g of sugar. After preparing the infusion, 100 ml of previously fermented kombucha is added.

Fermented milk drink

Product: Natural yogurt, freeze-dried açaí and blueberry

How about trying a natural yogurt with fruit? This suggestion takes açaí and blueberry. Açaí is a darling in Brazilian cuisine for its unmistakable flavor, it has the  advantage of delivering several health benefits. Being a source of fiber, it helps to increase  the feeling of satiety in the body and improves the functioning of the intestine; protects  the heart because of its antioxidant power; and still guarantees much more energy for the  body due to its high protein content. 

Ingredients: 

  • 170 g of natural yogurt; 
  • 2 teaspoons of acai powder (8 g); 
  • Blueberry in natura. 

Preparation: 

Add the acai powder to the yogurt and mix well and then add the blueberry to finish. It will be ready for consumption.

Product: Yogurt with the addition of freeze-dried jambú

Yogurt mixed with jambú powder would be a great daily snack, because in addition to the qualities of yogurt, jambú has properties that help fight inflammation, it  has an anesthetic effect for toothaches and sore throats, as well as helping to treat coughs  and herpes, also helping to strengthen the immune system thanks to its vitamin C. 

Ingredients: 

  • 1 teaspoon of freeze-dried jambú (4 g). 
  • 170 g of natural yogurt. 

Preparation: 

After opening the yogurt cup, add a teaspoon of jambú powder and mix well. After this step, it is ready for consumption.

Alcoholic beverages

Product: Açai caipirinha with strawberry

Let’s teach them how to make a delicious açaí caipirinha. It’s a very simple recipe to make and quite practical, and definitely worth checking out. 

Ingredients: 

  • 1 shot of vodka (about 40 ml); 
  • 3 g of açaí; 
  • 5 chopped strawberries; 
  • Ice.

Preparation: 

Macerate all the ingredients with the help of a pounder or blend them in a blender until you get the desired consistency. Pour into glasses and serve.

Product: Wine smoothie with açaí

An intimate and tasty drink to taste. The incomparable aroma, intensity and flavor of açaí along with the wine will conquer you. 

Ingredients

  • 15 g of açaí; 
  • 1 American glass of soft or dry red wine; 
  • 2 peanut butter cookies (optional); 
  • ½ can of condensed milk; 
  • Ice. 

Preparation: 

To make the drink, place all the ingredients in a blender and blend. The suggestion is to serve them in long glasses, açaí style, or serve them in glasses, wine style. 

Product: Alcoholic Acai Frozen

This recipe may seem exotic, but the combination of açaí with cachaça is delicious in  every celebration or place. 

Ingredients: 

  • 40 ml of cachaça (or your favorite drink); 
  • 3 g of açaí; 
  • 5 ice cubes; 
  • Mint to taste.

Preparation: 

Put all the ingredients in the blender and blend for approximately 2 minutes, until obtaining a homogeneous liquid. Serve right away.

Product: Catuaba ice cream with açaí

Geladinho, sacolé or chup-chup – no matter what you call this delicacy of Brazilian cuisine, what matters is that this is the best option for hot days! What you may  not know is that you can turn this delight into an alcoholic drink, just have the right  ingredients. 

Ingredients: 

  • 500 ml of catuaba; 
  • ½ can of condensed milk; 
  • ½ box of milk cream; 
  • 1 spoon of neutral alloy (found in specialized confectionery stores); 
  • 3 tablespoons of açaí. 

Preparation: 

Mix all the ingredients in the blender, fill the bag with ice cream (chup chup bag – measure 5 cm x 23 cm) and let it freeze in the fridge overnight.

Product: Gin infused with jambú

One of the most replicated recipes in the world gets a very Amazonian version. The Jambú-Tônica, the traditional gin adding the ‘tremor’ of the jambú. 

Ingredients: 

  • 1 L of gin; 
  • 15 g of freeze-dried jambu. 

1.1) Longevity Martini 

  • 1 dose of gin infused with jambu; 
  • 10 ml of dry vermouth; 
  • 1 tablespoon of olive water; 
  • 1 olive to decorate; 
  • Lemon peel twist; 
  • Ice. 

Preparation: 

To prepare jambú-infused gin, add 1 liter of gin with 15 g of jambú and leave to infuse for 48 hours. Strain and reserve.

For the drink, add the dose of gin, olive water, vermouth and lemon twist in a mixing bowl with ice and mix for a few seconds. Strain the drink into a previously chilled  martini glass. Decorate with the olive.

Product: Cosmopolitan with vinagreira

Cosmopolitan is a classic and contemporary drink, featured since the 80s. Shaken in a cocktail shaker, it’s easy to make at home. Well, it’s time to liven up your day with a  perfect blend. An Amazonian version of Cosmopolitan, in which the special touch of tea,  the vinagreira, gives a new lease of life to the traditional Cosmopolitan. 

Ingredients: 

  • 120 ml of vinagreira tea (recipe above); 
  • 50 ml of vodka; 
  • 20 ml of your favorite vermouth (apple, wine…). 

Preparation: 

First, in a cocktail shaker, mix all the ingredients with plenty of ice; Once that’s done, just strain and serve your Cosmopolitan in a nice glass.

Product: Vinagreira licor

Ideal for those who love to drink sweet things, this mixture will surprise you with its unique taste, slightly sour and extremely pleasant. To prepare you will need: 

Ingredients: 

  • Water (50%); 
  • Cachaça (100%); 
  • Freeze-dried vinagreira (10%); 
  • Sugar (up to 45%). 

Preparation:

In a container add sugar, water and vinagreira, and then bring to the fire until boiling point. Let the water and sugar boil until dissolved and homogenized, then cool the  syrup (40 ºC). Add the cachaça and fill the bottle for the maturation process for 30 days.  After this period, filter to remove suspended particles deposited at the bottom of the bottle  and carry out the final bottling of the material.

Product: Vinagreira sparkling wine

Perfect for summer days, to drink alone or with a partner, this drink recipe can be served with appetizers or a very refreshing dessert, you choose.

Ingredients:

  •  1 L of water; 
  • 350 g of sugar; 
  • 300 ml of lemon juice; 
  • 10 g of vinagreira; 
  • A sterilized pet bottle. 

Preparation: 

Boil water, sugar and vinagreira. Let it cool and add the lemon juice, without the seeds. Shake well. Strain through a fine sieve and fill in pet bottles with the help of a  funnel. Squeeze the bottle in half, hold until the liquid almost overflows, and cap tightly.  Let it ferment in the shade in a cool place for 15 days. It is carbonated and slightly  alcoholic. Once opened, keep in the fridge.

Product: Vinagreira lemon Gin

This vinagreira lemon gin cocktail is a fun and beautiful brunch drink idea that will give your guests something to talk about. If you are hosting a brunch party and  looking for alcoholic drinks this simple gin cocktail recipe is na absolute winner. 

Ingredients: 

  • 50 ml of gin; 
  • 25 ml of lemon juice; 
  • 25 ml of vinagreira syrup (Recipe above); 
  • Tonic water of your choice; 
  • Ice; 
  • 2 thin slices of lemon for garnish. 

Preparation: 

In a 400 ml glass with ice, add the gin, lemon juice and vinagreira syrup. Top up with tonic water and stir gently. Slide the lemon slices against the drink. 

Product: Red Colins with vinagreira

An explosion of red color, this cocktail is light and refreshing; but make no mistake, he is quite alcoholic. Don’t let this drink fool you. It has sweetness, is light and  refreshing. You will drink it thinking it’s a refreshment. But believe me, it’s not. 

Ingredients: 

  • 50 ml of gin; 
  • 30 ml of concentrated vinagreira tea (Recipe above);
  • 25 ml of lemon juice;
  • 20 ml of sugar syrup;
  • Sparkling water.


Preparation:

Set the sparkling water aside and add the rest of the ingredients to a cocktail shaker
with ice. Beat gradually, shaking. Then strain everything into a large glass and top up with water.

Syrup

Product: Vinagreira syrup

Whether coloring ice cream or decorating and flavoring drinks, you should make this recipe as soon as possible! Just a touch of floral freshness brings enough tropical  spirit to turn any drink into a mini-vacation. Vinagreira syrup can liven up a luau or add  an exotic touch to everyday teas and lemonades. The vinagreira, by the way, is very  versatile because of its color and acid flavor. It can be used in the form of tea, infused  butters, pressed flower cookies, and of course, in homemade syrups! 

Ingredients: 

  • 10 g vinagreira; 
  • 1 cup (100 g) of sugar; 
  • 2 cups of water; 
  • Juice of 1 lemon (approximately 2 tablespoons). 

Preparation: 

Put all the ingredients in a pan. Bring to a boil until the sugar dissolves and boil for about 10 minutes. Turn it off and let it rest for at least 30 minutes. Return to the pan and boil to thicken to the desired point. Pass through a cloth, colander, or paper filter to  remove small particles (this step is optional). Store in small bottles or a large bottle. Allow  to cool to room temperature and then store in the fridge until use. Makes approximately  300 ml of syrup.
